RIGATINO E GOTA
Obtained from the "less noble" cuts of the pig (belly
and cheek), Bacon and Cheek are two of the tastier, more savoury
products. Their preparation simply involves rubbing with garlic,
salting, peppering and maturation. They are excellent raw, but
can also be used for the preparation of tasty dressings and
dainty fried bases for sauces. |
