FINOCCHIONA

"Finocchiona" is made with choice, fat and lean meats, ground and mixed with wild fennel seeds. This is a tender, tasty salami that crumbles easily when sliced. It should be served possibly with a good wine and, in spring, with bread and fresh broad beans.
