ARISTA E CAPOCOLLO

Arista pork loin and capocollo are obtained with the finest cuts of meat, lightly veined with fat. After salting, they are washed thoroughly with vinegar and seasoned with wild fennel seeds and flowers. After a long maturation, they acquire a unique tenderness and flavour.
